How to make an amazing coffee gelato.Coffee gelato is a classic recipe for homemade ice cream: it is very simple, with milk, cream and strongly brewed coffee!This ice cream involves the use of the ice cream machine.The coffee can be made in an NESPRESSO machine or with a MOKA coffee maker, very traditional Italian coffee maker brand for making an authetic Italian coffee. (Bialetti machine).If you don't have one of these machines, I'll give you the chance to use instant coffee (or soluble coffee), but be sure you'll make it strong.The secret is to use excellent whole milk, preferably organic milk, with a fat percentage of at least 3.5%, a good fresh cream (not vegetable cream).I also recommend adding milk powder, which will help the ice cream to have an exceptional creaminess as well as making an ice cream that is not cold on the palate!The tapioca starch will help the ice cream have fewer ice crystals and be creamier.This recipe involves the use of an ice cream machine!

Ingredients
- 200 g milk whole (3.5% fat)
- 200 g cream 35% fat
- 60 g sugar
- 70 g skimmed milk powder
- 40 g glucose syrup
- 10 g tapioca starch
- 150 g coffee strongly brewed
Instructions
Preparation
- Let’s start by putting all the powders together … then the sugar, the milk powder and the tapioca starch.
- Add the liquids then the milk and cream and of course the coffee. Stir.
- Add the last ingredient: the glucose syrup. Put it in the microwave for a few seconds to make it more liquid.
Cooking
- Now let's move on to the stove: turn it on to medium heat and wait for it to boil. When it boils, wait ten seconds and remove it from the stove.
Cooling down
- Cool it (I use a pyrex bowl) and put it in an ice bath. That means: ice and cold water. It needs to reach 4'C degrees.
Freezing in the ice cream machine
- Pour into the ice cream machine and wait for the ice cream to be ready. My ice cream machine will take about 50 minutes.
Extraction and service
- Take the ice cream out of the machine and put it in a plastic tray. Enjoy immediately if you prefer soft and creamy, or cool for a couple of hours in the freezer if you prefer more compact.
