Citrus ice cream with eggs, lemon and orange
A fragrant recipe! Egg cream ice cream with orange, lemon and lime!
A perfect ice cream recipe delicious on its own or combined with a crunchy hazelnut crumble!
Equipment
- scale
- spatula
- ice cream machine
- knife
- juicer
- pan
- grater
- mixer or whisk
- ice cream container with lid
Ingredients
- 230 g milk fresh whole
- 100 g cream fresh , 35%
- 100 g sugar
- 30 g skimmed milk powder
- 10 g corn starch
- 15 g glucose syrup
- 3 eggs
- 10 g orange zest + zest
- 10 g lime zest + zest
- 10 g lemon zest + zest
Instructions
- Add the liquids: milk, cream. Mix well.
- Add the eggs, mix well.
- Add the glucose syrup.
Cooking
- Bring on the stove while continuing to stir, when it thickens and the first bubbles form, wait 10 seconds and turn off, continuing to stir.
Cooling down to 4'C
- Cool the cream by preparing an ice and water bath, until it is cold enough to be placed in the refrigerator. Allow to cool down to 4 ‘C.
Ice cream production in the ice cream machine
- Pour in the cream and wait for the ice cream to be ready
Extraction and service
- Take the ice cream out of the machine and put it in a plastic tray. Enjoy immediately if you prefer soft and creamy, or cool for a couple of hours in the freezer if you prefer more compact.
- Sprinkle with orange, lime and lemon zest and serve with hazelnut crumble if desired.
